Vegan Ugali Sukuma Wiki [Kenyan Runners Staple]
Anjis back in the HHV kitchen for another healthy recipe demo! This time shes making a traditional Kenyan dish, called Ugali Sukuma Wiki. Durianrider often speaks of how all the best Kenyan runners rely on Ugali for energy, and with its simple vegan ingredients, we just had to try it out! Its cheap, easy to make, and both delicious and filling. You could certainly add more ingredients to this basic recipe to create your own version, too! Our version is pretty clean, with no oil, salt, onions or garlic, though we do use several spices to add flavor.

<br>INGREDIENTS:
<br>Ugali:
<br>2 cups organic corn meal
<br>4 cups water
<br>
<br>Sukuma WIki:
<br>2 cups chopped fresh tomatoes
<br>1/2 cup tomato sauce
<br>1 bunch collard leaves
<br>2-3 large mushrooms
<br>1 small sweet yellow pepper
<br>1/2 lemon juice
<br>1 tsp each cumin & turmeric
<br>Cayenne pepper and/or black pepper to taste
<br>1 bunch cilantro
<br>1 cup water
